Golden Chiffon Cake

- 2 cups cake flour, sifted
- 1 1/2 cups sugar
- 3 teas. baking powder
- 1 teas. salt
Make a well in four mixture
- 1/2 cup cooking oil
- 7 unbeaten egg yolks
- 3/4 cups cold water
- 2 teas. vanilla or rind of 1 lemon
Beat smooth with a spoon
Put in large mixing bowl:
- 1 cup egg whites (7 or 8)
- 1/2 teas. cream tartar
Whip until whites form very stiff peaks.
Pour egg yolk mixture gradually over whipped egg whites gently folding with rubber scraper just until blended. Do not stir. Pour into ungreased tube pan and bake.
55 minutes at 325 then increase to 350 for 10 min.
